Fermentation Method
The grapes are crushed and completely de-stemmed, and rapid fermentation started with no preliminary maceration. Aromas, tannins, and color are extracted naturally: no enzymes are added noradditional heating used. Vatting lasts from 10 to 12 days, then thefree-run wine and first pressing are blended, settled, and put inbarrels to mature. Savigny « Clos des Godeaux » is matured inoak -of which 15 to 20% is new- from the Allier, which brings anaromatic elegance to the wine. Maturing lasts about a year; thewine is then bottled without fining and with a very light filtering.
Tasting Notes
Deep red color.
It is charming. Even when young, it shows its promise with a profusion of aromas of red berries and cherries.
With a generous mouth, supple and even a bit greed-inducing. This is not a great keeping wine, but a wine to drink for the pure pleasure of it and to enjoy young.
