Fermentation Method

The grapes are harvested manually, sorted, completely de-stemmed and the fermentation started rapidly. Maceration lasts approximately 12 days, with the cap punched frequently. The free-run wine and the first press wine are then blended, allowed to settle for two to three days, and put into barrels, where it matures for about a year. The oak barrels . The wine is bottled without fining, and with a very light filtration.
