Fermentation Method

Picked by hand and sorted on a sorting table prior to pressing. Cooling of the bunches in order to carry out a pre-fermentation maceration. Pressing of the whole grapes, meticulous division of the must. Fermentation at 14°C in 300 L French oak barrels (fine grain, lightly toasted). This enables us to fully respect the character of the grape variety. The wine is then aged on its lees for 3 months.

Tasting Notes

COLOR: Pale yellow with slightly golden nuances.
NOSE: Distinct personality, intense and deep. Ripe stone fruit: loquat and peach. Apple compote, honeyed notes. Chamomile blossom tea, yarrow, grapefruit peel, bitter almond.
PALATE: Silky, broad, unctuous. The ripe fruit notes return via the retronasal passage and blend with a saline overtone giving the wine nice tension and a lively character. Pleasant, long, refreshing finish.
