Vinication Hand sorting of bunches before press to select only the best. Pre-fermentative maceration for 8 days at 6°C. Alcoholic fermentation in stainless steel tanks for 16 days at 26°C -28°C. Post-fementative maceration for 8 days. Run o and malolactic fermentation. Ageing 60% aged in French oak barrels for 10 months, 40% aged in stainless steel tanks.
