Tasting Notes

The lees are slightly pressed (therefore soaked in must) without grape stalks and do not go through fermentation. Immediately after pressing, the lees are brought to the distillery. Here they remain in containers for 3-5 months, during which fermentation occurs, transforming the residual sugar into alcohol.
